Whole grain pasta can be healthy, especially made with flax seed as your egg substitute. It’s full of flavor and simple to do. Plus, it’s vegan. Bonus!

Recipe type: Main Dish
- 4 tbsp. ground flax seed
- ¾ cup warm water
- 4 tsp. olive oil
- 2½ cups whole grain spelt flour
- ¼ tsp. sea salt
- Ground flax seed well (I use a coffee grinder). Let it sit in warm water for a couple minutes and let thicken to an egg-like consistency.
- Combine flour and salt in a mixing bowl. Add flax mixture and olive oil. Stir with fork. As mixture comes together finish blending ingredients with your hands. If it’s too dry, add water 1 tsp at a time.
- Turn the dough onto a floured board. Knead the dough with your hands for 1-2 minutes until it is well mixed. Form into a log, cover with saran wrap, and chill for at least 30 minutes.
