5 Minutes to Mexico
Here’s one of my 5-minute healthy, easy, delicious meals or snacks – however you want to eat it. You can bust it out any time or bring it to work – it reheats great. It’s one of the reasons why I always have these go-to foods on hand.

Calories: 245kcal
Ingredients
- 3 cups about 1 1/2 bags of Trader Joe’s organic pre-cooked brown rice
- 1 15 ounce can black beans about 1 1/2 cups, I use Eden organic no sodium
- 1 1/2 – 2 cups salsa one 12 or 16 ounce jar, depending how much sauce you like
- 6 ounces of Avocado Optional
Instructions
- Rinse and drain beans
- Put all of the ingredients together in a saucepan and heat together over medium heat for about 5 minutes
- Adjust seasoning if needed
- Top with avocado
Notes
Salsa recommendations - I like something with flavor and a little heat, Muir Glen, Whole Foods and Trader Joe’s have great options.) The better salsa you use the less avocado you will need. How easy is that? Choose that salsa wisely – it’s key!!
