Fresh Tomato Basil Dressing

fresh chopped tomatoes
preferably skinned and seeded
fresh chopped basil
high quality extra virgin olive oil
enough to cover mixture
Sea salt and pepper to taste
Makes enough for about 1 lb pasta
1 lb of protein, or 2 cups quinoa (uncooked)
Chop tomatoes. Remove seeds and skins.
Mix all ingredients in a medium sized mixing bowl.
Add sea salt and pepper.
Cover with a high quality extra virgin olive oil (about 1/2 cup). Gently stir.
Cover and let sit over night so flavors can meld.
Toss, Serve and Enjoy
Toss on top of pasta, quinoa, chicken, fish, veggies, rice, just about anything! Adjust seasoning to taste.
