Fresh Tomato Basil Dressing

  • 2 1/2 - 3 cups fresh chopped tomatoes preferably skinned and seeded
  • 3/4 cup fresh chopped basil
  • 2 cloves garlic grated
  • 1/2 cup high quality extra virgin olive oil enough to cover mixture
  • Sea salt and pepper to taste
  • Makes enough for about 1 lb pasta 1 lb of protein, or 2 cups quinoa (uncooked)



  • Chop tomatoes. Remove seeds and skins.
  • Chop basil.
  • Grate garlic.


  • Mix all ingredients in a medium sized mixing bowl.
  • Add sea salt and pepper.
  • Cover with a high quality extra virgin olive oil (about 1/2 cup). Gently stir.
  • Cover and let sit over night so flavors can meld.

Toss, Serve and Enjoy

  • Toss on top of pasta, quinoa, chicken, fish, veggies, rice, just about anything! Adjust seasoning to taste.
